So ages ago I found on Pinterest that you can make a Dulce de Leche by simply boiling a can of condensed milk.
I mean- seriously, how did I live before that site?!
You will need:
8 digestive biscuits
6 tablespoons of coconut oil
1 can of condensed milk
So here is my version of events….
Firstly, stick the can of condensed milk in a saucepan, ensure there is at least an inch of water covering it. It basically needs to boil for about 3 hours. Now there are recipes on the Internet that say you can put it in a slow cooker and leave overnight/ for the day. I am a bit of a newbie with a slow cooker, and sticking a sealed can in it whilst unattended freaks me out. You never know, I may go to the dark side one day. So anyway, I advise you check that can/the water level often!!
Take 6 ramekins. I have some little glass ones I got with lids when I first became addicted to Gu puds , seriously you need to try those bad boys-amazing!!
Anyway, I digress!
Take about 8 digestives, place them in a bag and the living daylights out of them (great therapy+pudding at the end, I mean seriously what’s not to love?)
Once it’s a lovely crumbly mess, put to one side.
Put the coconut oil in a bowl, I nuked it in the deadly microwave for a bit till it was liquid. Living on the edge.
Combine the crumbs and the oil, stir well. Spoon equal amounts into each ramekin and press down with the back of a spoon to firm it.
Pop in the fridge, and wait for the condensed milk to finish.
I waited for it to boil for 3 hours (impressed)
And it looked like this… I was impressed. Although-watch out- the pressure in that little turbo charged can of sugaryness is ridic! I pierced it and it spurted across the kitchen!
So then I guess I should have waited for it to cool, but hey ho. Spoon it onto the biscuit, slice up the bananas and chuck em on. Nom nom!
Please note I was good, only had one. The rest went into the fridge so should be even better!
